Roquette Washed 2 oz , Frisee, Washed 2oz , Cos Washed 8 oz , Onion, Red 4 oz , Red Pepper 4 oz, Sweet Chilli Mayo 4 oz, Spring Onion 1 oz
For the roasted Topping: Cashews 4 oz , Sunflower Seeds 4 Tablespoons, Pumpkin Seeds 1 Tablespoon, Hemp Seeds 1 Tablespoon , Sesame Seeds 1 Tablespoon , Rape Seeds 1 Tablespoon , Rapeseed Oil, Extra Virgin 1 Tablespoon , Sea Salt to taste, Black Pepper, Ground to taste
For the Dressing: Garlic Fresh Cloves 2, Cornichons 2-3 , Egg Yolk 1 large egg , Cayenne Pepper pinch , Chilli Flakes pinch , Sweet Chilli Sauce 1 fluid oz , Red Wine Vinegar 1 Tablespoon, Rapeseed Salad Oil 3 fluid oz
For the toasted topping: Combine all the seeds and nuts and season to taste with salt, pepper and extra virgin rapeseed oil. Roast in a pre-heated oven at 170o for 5 minutes. Allow to cool.
For the dressing: Combine egg yolks, cayenne pepper and chilli flakes in mixing bowl, and whisk thoroughly. Slowly add red wine vinegar and rapeseed oil, while continuing to whisk. Finely mince garlic and cornichons. Add garlic, cornichons and sweet chilli sauce and whisk in.
Chop lettuce into bite size pieces and place in a large mixing bowl. Dice red onions and red peppers and add as well. Add Sweet Chilli Dressing and toss thoroughly. Distribute coated leaves evenly amongst 4 bowls. Cut spring onions on an angle and sprinkle over salads. Sprinkle roasted seeds and nuts over salads.
You can take this salad a step further and make your own sweet chilli sauce for it. But I find for all the extra work it takes, a good quality store bought one will do just as well. With the seeds, if you have difficulty getting-or simply do not like-any one or more of the seeds, feel free to substitute as you like.
This really is quite a healthy salad, the small amount sugar added from the sweet chilli sauce is easily offset by the cashews, seeds, and greens. Healthy can be delicious.
